Hey January 2014

Oh hey there!

It's been (what feels like) a while.  I hope the holidays were wonderful for you.  I had a fantastic holiday season.  We traveled and visited with family for Christmas, so then for New Years my husband and I stayed at home.  We went to Chipotle then came home and made vegan wonderful peanut butter cups to go alongside popcorn and so delicious ice cream.  

 
My husband received all the Harry Potter movies for Christmas, so the weekend after Christmas we took that Sunday and watched three of them.  I literally stayed in my pajamas all day.  I can't even remember the last time I did that and it was AWESOME.  On New Years Eve we watched the very last Harry Potter.  


 On New Years Day we went to see The Secret Life of Walter Mitty which was a great movie for that day - relaxing with a good message.  Quite different from The Wolf of Wallstreet which we saw the previous weekend.  Although I thought that movie was crazy, I'm glad I saw it.  Hard to believe its a true story and Leo did such a good job in the role.  

I've been enjoying the new pan we got for Christmas.  It fries tofu absolutely perfectly - especially in sesame oil with sesame seeds on top.  At the last minute, once the tofu is fried, I dump out the excess oil, add soy sauce and sriracha, and it's heavenly.  My favorite fried tofu yet.


 Anyways... our house is still in construction mode, but much progress!  We do not have a massive hole in the garage anymore, drywall is in place in the kitchen, the bathroom has been painted, and new flooring goes in the bathroom and kitchen hopefully next week.  THEN we will officially have our house back in order.  I will so love having an upstairs bathroom once again.  Talk about appreciating the small stuff.

Well it got super freezing today and it's supposed to be worse tomorrow along with lots of snow.  January is really making an entrance, but my birthday and my best friends birthday is in January making it a very happy month. 

I must tell you that I got a stack of vegan cookbooks for Christmas and I can't wait to dig in.  My goal for the new year is to make at least one new recipe a week.  I know for some of you that's really easy, but for me it takes effort.  We kind of get stuck in a rotation of our favorite meals.  But it's time to dive into new recipes.  Lately I've really been wanting to make a vegan lasagna.  I've made one in the past with tofu and spinach and wonderful spices and the tofu acted like ricotta cheese and it was incredible.  Too bad I have no idea where that recipe was from.  Oh well!  Hopefully I will be sharing a recipe like that soon. 

I have not been running in the snow, just walking the dogs.  I plan to get back on the elliptical soon though and we're hoping to acquire a treadmill for downstairs.  I'm quite excited about that.

  1. Happy New Year! Love hearing the stories - sometimes it is great to stay in pajamas all day long!

    I made a great vegetarian lasagna a couple of weeks ago. My family has been tolerant of my vegetarian and vegan meals, but this one they absolutely loved!

  2. Mmmm....lasagna! I like mine with spinach and mushrooms, plus ricotta and a bit of meatless red sauce. It's still tropical here, but I'm suddenly feeling a lasagna craving.... =)

  4. Hello! Glad to see you back. After traveling non stop all I have done this week in lay in my PJ's... besides NYE when we went out. I can't wait to hear about your new cook-books. I can litterally curl up with cookbooks and read them like novels. I got a William Sonoma Soup cookbook from Santa and I have been going soup crazy!

    I love Amy's tofu lasagna. I eat that with a huge side of broccoli. Quick, healty and so satisfying!
