Oh So Sweet

One of my favorite foods is the sweet potato.  I eat a sweet potato at least once a week whether it's baked, roasted, or in the form of fries.  Sometimes I even eat one baked for breakfast and then dress it up with earth balance and cinnamon. Yum!
 
I wanted to share one of my favorite sweet potato recipes.  I adapted the recipe from The Kind Diet and made it a little bit my own.  It works great as a snack or a side with dinner.  I use one whole sweet potato when making this dish just for me.



Ingredients:
Sweet potato (1)
Olive oil (1 tbs)
lime juice (1 tbs)
garlic (1 clove)
salt and pepper to taste

1. Peel the potato and cube it into bite size pieces.

2. Mix in a bowl with olive oil and salt and pepper.

3. Bake on oiled baking sheet for approximately 30 minutes at 425 degrees (until tender to bite...I like mine to still have a little crunch!)

4. When finished baking return to bowl and mix with garlic, lime juice (or lemon), and salt and pepper to taste.

5. Time to eat!

  1. I think I eat sweet potatoes at least 3 times a week. We bought 6 for this week, but both Tyler and I are like, ugh, is that enough?!? hahaha This recipe sounds yummy!

  2. My favorite way to eat the sweet potato is prettttty much anyway! I actually had a friend confess last week to NOT LIKING SWEET POTATOES?! I didn't know that was possible -- needless to say, I had to sit down to handle news like that ;-) Your recipe sounds tasty, can't wait to try it out!

  4. I've never had a sweet potato with garlic. I usually chop and bake them with olive oil and sea salt.

  6. You and I are totally speaking the same language! Sweet potatoes and I are best friends :). Thanks so much for the recipe. The addition of lime juice sounds really good. I will have to give it a try!

    My favorite way to eat sweet potatoes is either as fries, or baked and topped with a dippy egg or vegetarian baked beans!
