Food & Running

Hey!  How's your week been?

It's been so sunny the last few days - thank goodness!!!  However, when I went running this morning it was only 45 degrees out, but it felt nice.  I wore a tee-shirt and arm warmers (best invention ever - keeps you warm without the extra weight of a jacket).  It was that kind of cold where you know things are heating up.  I had one of the best morning runs I've had in a while.  Honestly, the cool air and sunshine are game changers when it comes to my runs.

First three miles I felt the fatigue in my legs from Tuesday's race.  And then I started to feel warmed up...

I realized after this run that I only planned to run 5 miles.  Oh well, not complaining about an extra mile whatsoever!

My husband and I kind of skipped grocery shopping this week so I got take out from a deli down the street from my work one day.  One of the salads was an Asian slaw and the other a chickpea/couscous combo of deliciousness.  They don't normally have vegan salads so I picked the right day to go - woo!  Definitely need to grocery shop this week to avoid extra spending at lunch time though.

Last night my husband and I did burgers for dinner.  I had an Amy's veggie burger with daiya melted on top and a side garden salad.  It was exciting because these greens we grew from seeds!  Aren't the greens pretty looking?

Ok, so my weekend plans include going to my best friend's wedding dress fitting.  I haven't seen her in her dress yet so I'm super excited.  A 12 mile run is in the plans... got to get it done early before the heat sets in.  Also, long walks with my hubby and the dogs and lots of relaxation.

What do you do for lunch during the week?  Is it sunny by you?

  1. Sounds like a nice week filled with sunny weather! Aren't those days just the best.
That chickpea couscous combo looks absolutely delicious! Yum!
    I'd be all over that.
It's been on and off raining and sunny over here. So, nothing too bad but the rain can get a little crazy over here so I'm hoping it doesn't keep up!

  3. I usually end up eating leftovers for lunch or I throw together a salad with whatever I can find in the house. Have a wonderful weekend! Sun is out for now but Saturday and Sunday aren't looking so good in Toronto :(

  4. I've been soooo lazy about grocery shopping, too. The weather gets warm and it just gets hard to spend an hour in a grocery store. Have fun at the dress fitting-- that's pretty exciting!

  7. Your greens look so pretty. Its amazing that you grew it from seeds :) I almost bought some herbs for my kitchen window seal the other night but I didn't want to kill any more herbs until I figure out which ones will grow best in my window.

Good luck on your 12 miler. Your pace is awesome! I start half marathon training on Monday. We need to keep each other motivated.

  9. The vegetable garden is paying dividends already! How cool that you get to be so involved in your best friend's wedding! It's grey and gloomy today but yesterday was sunny, a one-day wonder but much appreciated.
