What's for dinner?

What are we having for dinner tonight?

My husband and I ask each other this question every day.  For some reason, even though it's only breakfast time, I like to know what I'll be eating for dinner.  This isn't something new.  I used to ask my mom what was for dinner as I left for school back 15 years ago too.  This is really strictly a work week thing now though.  Friday through Sunday is much more casual and go-with-the-flow.  But generally Monday through Thursday, dinner is planned.

Here's the plan (or already gone by) dinners for this week:

Monday - Sesame tofu (fried), brown rice, baked sweet potatoes, kale/collard sautéed side


Tuesday - Breaded eggplant baked and topped with marinara sauce, side of organic whole-wheat pasta with more sauce and sprinkling of vegan parmesean cheese, side garden greens salad (from our garden!)


Wednesday - Quesadillas with black beans and daiya (hubby has chicken in his), salsa and vegenaise on the side for dipping
 

Thursday - I'm trying to determine what's left in the house... Right now I'm thinking veggie burger for me (maybe grilled piece of chicken for hubby) with sweet potato fries and a side garden salad

Friday - Probably going out.

What's a dinner you have each week?  Do you like to plan dinner in advance?

  1. I try to make a weekly dinner plan... but I never end up making what I plan out. Your eggplant parm from yesterday looks so good!

  2. YUM!! Your tofu from Monday looks SO good!! I didn't know if your hubby was vegan or not - just confirmed in this post haha

    I think I'm going to make veggie burgers tonight!! I try to be a planner, but I somehow always fail at it, end up at the grocery store buying the same items each week and THEN find a new recipe that forces me to go out and buy additional items. Maybe I'll learn over the summer how to fix this ;) haha

    1. He was vegan for two years and then decided to add some meat back into his diet. He still eats largely a plant- based diet as most of the food in the house is just that. It's totally tough meal planning sometimes! I'll buy a bunch of food and then be like now can I make anything with the stuff I bought haha :)

  3. I just started meal planning and I love it because I'm the same way...I don't want to have to think about what I'm going to be eating for supper that night :)

  5. Looks pretty good. I especially like the quesadillas. Yum.
    I am a huge planner. I actually like to plan the majority of the meals for the week (breakfast, lunch & dinner for all 7 days) at the end of the week and go to the market Saturday mornings to get everything I need. Although, I have also been known to find in season things at the market and just work with them. Nothing wrong with planning!

  6. I usually plan my meals from Monday-Friday on the Sunday before. I try to get most of my meal prep done then. If I don't then when I get home from work I am usually too lazy to cook and end up eating out and spending wayyyy too much money and making poor food choices. Sunday prep is key! As for Fridays and Saturdays, I'm way more go-with-the-flow.
