I know I haven't been blogging too long, but I'm sure you've figured out over the course of the last month that I love dessert. I love cupcakes, cookies, brownies, ice cream...all of that goodness! And I love it vegan.

The Newbie: Peanut Butter Cookies
I found this recipe for Peanut Butter Cookies @ "My Whole Food Life" website. I was a bit reluctant, but even more so intrigued by the ingredients.
Below lists what these cookies are made of. Don't run away when you see the ingredients, give them a chance! I've eaten 6 of these cookies so far (one after a run!) and they are great! I think I should have baked them a few minutes longer (12ish minutes) - mine were just a bit on the raw side.
Ingredients:
1 ¼ cups chickpeas
2 tsp vanilla
½ cup + 2 T natural peanut butter
¼ cup honey
1 tsp baking powder
½ cup chocolate chips
2 tsp vanilla
½ cup + 2 T natural peanut butter

If you'd rather avoid honey (I have it occassionally) then I would recommend brown rice syrup. It's a great sweeter without the negative effects of white sugar. Some vegans are ok with honey. I have it once in a while. Whatever works best for you!
Let me be super clear on this - You cannot taste the beans in this recipe. All you taste is peanut butter deliciousness with chocolate chipes. I swear!
My husband stole some the chocolate chips prior (I did too of course) and my puppy got some love as well. Afterall, this week is all about the love.
