Peanut Butter Cupcakes

And of course they're vegan!

It's hard to call one cupcake my favorite, but shhh...these ones are my favorite!  Peanut Butter Cupcakes with Chocolate Frosting - ridiculously good!
Once again, the recipe is from Vegan Cupcakes Take Over the World
3/4 cup soy milk
2 tsp apple cider vinegar
1/2 cup natural peanut butter
1/3 cup canola oil
2/3 cup granulated sugar
2 tbs dark molasses
1 tsp vanilla extract
2 tsp ground flaxseed
1 cup plus 2tbs all-purpose flour (I use whole wheat)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Preheat oven to 350. 
1. Mix soy milk with vinegar in a measuring cup and set aside.
2. In a large mixing bown, cream the peanut butter, oil, sugar, molasses, vanilla, and ground flaxseeds until well combined.  Add the soy milk mixture and mix until incorporated.
3. Sift the flour, baking powder, baking soda, and salt in separate bowl and mix.  Add the dry ingredients to the wet and mix until just combined.
4. Fill cupcakes liners two-thirds full.  Bake 23-26 minutes (in my oven it takes 21 though!)
5. Remove from oven and transfer to cooling rack.

Time for frosting!

Chocolate Buttercream Frosting


1/4 cup margarine (softened)
1/4 cup shortening
1/2 cup unsweetened cocoa powder
2 1/2 cups powdered sugar
3 tbs soymilk
1 1/2 tsp vanilla extract

1. Cream together the margarine and the shortening until well combined.
2. Add the cocoa powder and incorporate well.
3. Add the confectioners sugar in about 1/2 cup batches and beat well, adding a little splash of soy milk (or almond milk) after each addition.
4.  When all ingredients have been well incorporated, add the vanilla and beat until light and fluffy (3 minutes with hand mixer, 7 minutes by hand)

And don't forget the ice cream!  Enjoy!  They are spectacular.


  1. Yum! I love peanut butter and I love cupcakes, so these HAVE to be good. Plus, the fact that they are vegan makes them even better! :)
