This Week's Food Feb 8th


This week has flown by!  But TGIF!  It’s been a week filled with lots of delicious food.  Here’s what I had:

Breakfasts:  1-Unfrosted Mini-Wheats with almond milk, 2-Corn puffs with almond milk,      3-Brown rice with sautéed kale sprinkled with sunflower seeds, 4-Kukicha tea every day (first thing of the day)

Lunches:  1-Lentil Stew leftovers, 2-Brown rice and black beans with guacamole, 3-Naked Green Machine drink and Apples with Peanut butter, 4-Pasta & faux meat crumbles leftovers

Snacks:  Organic baby carrots, Raw Vegan Chocolate Coconut Energy ballsApples with peanut butter, Almonds, Walnuts, Sweet potato chips, Soy decaf lattes (from Starbucks and a few homemade!)

Dinner:  1-Lentil Stew with cooked collards (I mixed them together), 2-Chipotle burrito bowl with side of chips and gaucamole, 3-Chipotle home creation (black beans and rice with cooked onion and guacamole on top), 4-Take-out Chinese (tofu and broccoli in garlic sauce over white rice), 5-Brown rice noodles with faux meat crumbles in tomato sauce, 6-Udon noodles in seasoned vegetable broth with cooked kale (recipe coming!)


Let's not forget about dessert!  Vegan cupcake with sodelicious ice cream of course (only on Monday because they were leftover from last weekend, I shared the rest)

I’m not sure what we’ll have for dinner tonight yet.  Maybe sesame tofu over sweet potato and brown rice…

    Hope you don't get a snow storm, although I do love a good snow storm, well as long as it's not dangerous!
