Homemade Chipotle

 Super Simple.  Totally Delicious.


Ok, so yesterday was one of those days where my husband and I decided to take a nap at 5pm and suddenly it was Monday morning!  Happy Monday!!!  If you need a quick dinner for tonight, here's one of my favorites.

Brown rice. Organic black beans. Guacamole. Salsa


Chipotle is heaven on earth for me.  My husband and I tend to go to Chipotle a few times a month.  The portions are huge and the food is always fresh and delicious.  But when trying to save money, homemade chipotle does the trick!  This is probably one of the easiest dinners, but one of my favorites.  I like to make extras so that I can have leftovers for lunch the next day!

I simply cook brown rice (I use instant once in a while) then I like to sautee an onion and add the rice and black beans.  Now it's time for toppings.  I put whatever toppings I'm craving that night - guacamole, fresh tomatoes, salsa, parsley - whatever strikes your mood!


It's basically the kind of dinner that's so easy, it's not quite fair to the other complicated dinners how wonderful it is.

  1. I've never been to Chipotle, but everyone says I MUST go haha. The homemade burrito bowl looks just as good!

  2. We don't have a chipotle where I live, but we have a Qdoba (which is pretty much just okay). I go crazy for pretty much all mexican food though, so I like to make it at home, too :)
