For a while now I've been wanting to try overnight oats. I've seen it on numerous blogs and since I finally had old fashioned oats in the house (I'm normally a quick oats kind of woman), I went for it last night.
I basically came up with this concoction after reading numerous peanut butter overnight oats recipes (Peanut Butter Fingers made her overnight oats look so good!)
I just slightly modified it to make it best for me.
I had grabbed the idea from another blog (I wish I could remember where!) to use an old peanut butter container. Lucky enough I actually finished a jar of peanut butter last night making my no bake cookies (added lots of ground flax this time!) so the container really inspired the overnight oats.
Into the container went:
1/2 cup vanilla almond milk
3/4 cup old fashioned oats
1 tbsp. peanut butter (and the remnants from inside the jar - awesome!)
1 tsp. chia seeds
1 tbsp. unsweetened coconut
And then I just stirred it all together and put the container in the refrigerator overnight. This morning I added a 1/2 cup more almond milk, gave it a stir, and breakfast was ready.
I am now a fan of overnight oats. Granted I was a little cold this morning so I was wanting something hot. Tea did the trick, but I could see having overnight oats a lot this Spring/Summer.
What's cool about using old nut butter containers is I could have just added a little milk and then brought the oats to work to eat as my 9 o'clock second breakfast at work :) Easily transportable and carries lots of deliciousness.
