Overnight Oats

For a while now I've been wanting to try overnight oats.  I've seen it on numerous blogs and since I finally had old fashioned oats in the house (I'm normally a quick oats kind of woman), I went for it last night. 
 
I basically came up with this concoction after reading numerous peanut butter overnight oats recipes (Peanut Butter Fingers made her overnight oats look so good!)
 
I just slightly modified it to make it best for me.
 
 
I had grabbed the idea from another blog (I wish I could remember where!) to use an old peanut butter container.  Lucky enough I actually finished a jar of peanut butter last night making my no bake cookies (added lots of ground flax this time!) so the container really inspired the overnight oats.
 
Into the container went:
 
1/2 cup vanilla almond milk
3/4 cup old fashioned oats
1 tbsp. peanut butter (and the remnants from inside the jar - awesome!)
1 tsp. chia seeds
1 tbsp. unsweetened coconut
 
And then I just stirred it all together and put the container in the refrigerator overnight.  This morning I added a 1/2 cup more almond milk, gave it a stir, and breakfast was ready.
 
I am now a fan of overnight oats.  Granted I was a little cold this morning so I was wanting something hot.  Tea did the trick, but I could see having overnight oats a lot this Spring/Summer.
 
What's cool about using old nut butter containers is I could have just added a little milk and then brought the oats to work to eat as my 9 o'clock second breakfast at work :)  Easily transportable and carries lots of deliciousness.

  1. Love overnight oats. I actually had some this morning. I always mix chobani into my mixture at night before putting it into the fridge. Makes it extra thick & creamy =)

  2. I love overnight oats! I haven't made them with PB but I'll have to try it next week. I usually prep mine on Sunday and eat them throughout the week, so easy and SO good! Sometimes when I don't want to eat them cold, I'll warm it up in the microwave. I love adding frozen berries into the mix and in the morning they are perfectly defrosted.

  3. They are SO SO amazing! I was doing my juice cleanse yesterday and had to have a bowl at night to keep me from feeling dizzy – so yum??

  4. Oh yes, this is my all time favourite breakfast! If you take it out of the fridge 30 minutes before eating it, it gets to room temp and is perfect =)
    I triple love adding 1 tsp of cacao or carob powder and a few drops of mint extract to make chocolate mint oats. YUM

  5. I've never tried overnight oats. I'm not sure how happy I'd be with eating it cold, so I've always stuck to my crockpot oatmeal. We do go through PB like crazy though, so I think you've convinced me next time we have an empty jar :)
