This Week

It's Friday. Yeah. Yeah. Yeah!

I hope this week has been kind to you.

Below are a few things that have defined my week.  I guess several things are repetative week-to-week, but I definitely have a much more calm mind this week.  Last Sunday was the first day that my husband and I could relax and truly enjoy just living in our new home.  Aside from hanging a few pictures, the day felt normal.  Normal in that wonderfully magnificent way of we weren't stressing to get a million things done - we could actually just beAnd that was fantastic.  I'm hoping for more of that this weekend.  There will be more picture hanging, Jax has already left fur in places that I need to vacuum (didn't take long!), and it would be awesome to start working on the yard too... 

I'm planning for another long run this weekend (woowoo!) as well and I want to make something fun and delicious!

Ok, onto details of the week:


Running - Sunday: 10 miles, Wednesday:  2.8 miles, Friday: 3 miles and Sunday:  planning for somewhere between 6-10 miles

Macrobiotic Breakfasts - I made a point to get back to having greens (kale) with breakfast.  I really start the day which such a happy mind when I do that.

Jax - This pup got lots of love this week (as he alway does).  I ran with him 2 mornings and my husband walked him two mornings and gave him walks after work (since he gets home first).  Jax is the most enthusiastic running partner EVER.  I'm telling you, it doesn't matter how early it is, he is SO EXCITED TO RUN!  Jax also gets any leftovers we aren't going to eat.  I'd say he leads a happy life and I hope he agrees!

Lattes/Coffee - I started making iced coffees this week because the weather was actually warmer.  I brew a cup of coffee in my keurig then put it in my freezer for 20 minutes while I'm getting ready.  As I'm walking out the door, I add a handful of ice and vanilla almond milk.  Honestly the vanilla almond milk makes it really the best iced coffee I've ever had.  I can proudly report I have not purchaed a latte/coffee out in a while.  All homemade lately!

Amazing Dinners - The picture below is udon noodle, broccoli, tofu stir fry that my husband made this week - incredible!  He put in lots of fresh ginger which added such a nice flavor.  Definitely my favorite meal of the week!  We also did two chili nights with quesidillas with daiya and sweet potato chips with salsa - simple and oh so tasty!


That's my week and now onto the weekend!

  1. I love adding vanilla almond milk to coffee! My weekend plans include lots of studying and paper writing and hopefully a long run. My next half is in 3 weeks and I want to make sure I'm logging the miles. Hope you have a great weekend :)

  2. That's so awesome that you can run with your dog - that's one of the reasons that I really want a dog!

    My favourite meal this week was a Green Goddess bowl with tofu from the cookbook Refresh. I just bought it and I'm loving it already!
