A New Shake for Spring

I've been reading about the benefits of coconut here!  It's an older post from one of my favorite blogs, but really interesting.  It inspired my smoothie this morning!

Ingredients:

1 tbsp. ground flaxseed
1 tbsp. chia seeds
1 tbsp. shredded coconut
1 scoop sunwarrior protein powder
1 cup vanilla almond milk
1 tbsp. coconut oil
1/2 banana
1/2 cup frozen strawberries

It's thick and really tasty!  Perfect after my three mile run this morning (first run back out there after my race - took a nice 1.5 weeks off).  Jax ran the first half with me - smile on his face the whole time.

I'm in serious need of a shower so off I go!

Have a great Wednesday :)

Do you love coconut?  What's your favorite recipe to include it in?

  1. YUM! Love coconut. I'm far too lazy to make shakes in the morning (read: I like to sleep as late as physically possible)but the ones you post always look so good!

  4. I love coconut but I've never thought about putting it into a shake before (and I'm a shake lover too so that works :)). Coconut product don't seem to be available in The Netherlands though so I'll have to wait until I return to Canada to try this out.

  5. My ultimate breakfast is oatmeal with a tbsp of peanut butter mixed in. It melts and makes the oatmeal extra creamy. I also love to add banana to oats!
