Cupcakes for Mother's Day

Good morning!
I'm sitting here writing to you with my overnight oats in hand...I thought I might actually take them to work in a few hours (I make them in an old peanut butter container), but they didn't last that long. 
Here's what went into my overnight oats last night:
3/4 cup old fashioned oats
1/2 cup almond milk
1 tbsp. ground flaxseed
1 tbsp. shredded coconut
1 tbsp. chia seeds
1 tbsp. peanut butter
Then I put them in the refrigerator.  This morning when I woke up I added another splash of almond milk to taste and a sliced banana.  Oh. So. Good.
I also wanted to remind you of my cupcake recipes here because I haven't talked about them in a while.  We're having the family to our home (first time having everyone over with us officially moved in!) for Mother's Day so of course I'll be preparing treats!

The weather has turned from sunny to rainy here, but I suppose it feels a bit more like spring now.  Before it was feeling like the middle of summer.  Hope you have a great day!

  2. Cupcakes always sound so good! I need to think of some sort of something extra to give my mom for Mother's day in addition to the socks I crocheted for her. Cupcakes might just be it ;-)

  3. Loved looking at all your cupcake pictures! I've make overnight oats several times. For some reason I love it better after a quick min or two in the microwave... Perhaps its because my office is so cold!
