Easy. Basic. Nourishing.

Good morning!


Do you ever crave just basic food?  I mean without lots of spices, sauce, ingredients... just plain goodness.  Over the weekend, I had a few cupcakes (as I'm sure you guessed with all my cupcake posts) and by Sunday night I just wanted simplicity.  I was craving a clean dinner to end the weekend.  It also makes me feel my best come Monday morning because I sleep better after clean eating too.

The basic ingredients:

sweet potato with olive oil (1 tbsp.) and a sprinkling of salt and pepper to taste

quinoa (fill that bowl up!)

kale seasoned with shoyu (organic soy sauce)


I peeled and chopped the sweet potato into bite size pieces, and then mixed them with olive oil, salt, and pepper.  Here's my favorite sweet potato recipe in case you're in the mood for them.  Then they went into the oven on a pan for 30 minutes at 400 degrees.

I had leftover quinoa from the previous day so I just heated that on the stove with 1/4 cup water to add some moisture when the sweet potatoes were almost done.

I cooked some kale in another pot with 1/4 cup water and then added about a tbsp. of shoyu for taste.  I then cooked the kale for a few minutes until it softened and turned brighter green.

I used the bowl I had previously mixed the sweet potato with olive oil in just becaue I knew the quinoa would soak up the residual olive oil.  So in went the quinoa, next the kale, and lastly I decorated the sweet potatoes on top.

This is my kind of meal.

  1. Can't ever go wrong with sweet potatoes. I've currently been obsessed with them, and enjoying them every single night for dessert. So good.

    To go along with your sweet potato meal, I'll share my favorite dessert recipe as of lately:

    ricotta cheese, sweet potato, almond butter, fiber one chocolate squares, and cinnamon! So good

  2. I love simple soups too!! or honestly...what you just described above! I used to make a cold quinoa salad and apart from all the veggies I load in it, the dressing was so simple of just EVOO, lemon juice, fresh parsley and some S&P - tastes delicious!!!

  4. I'm such a weirdo and love just eating a pile of plain Romaine lettuce, so I totally get the need for simplicity sometimes :) It's also great to just reach for a grain and some veggies and go to town, too. You know, when a pile of lettuce wont cut it.

  6. I'm recently starting to really like sweet potatoes/yams! ...have you looked into the differences? Favorite meal less than five ingredients! That's most of the meals I make! But I'll say grilled cheese!
