Apple Cider Vinegar Tofu

Happy Wednesday!

Today is my last day of work before the long weekend which is a beautiful thing.  I hope you get to enjoy a long weekend as well!  My plans include sleep (still catching up from NYC), runs, hanging with my hubby, walks with the pups, a bridal shower on Saturday for a great friend from high school...and of course vegan s'mores tomorrow!

Monday night I was in desperate need of a home cooked meal.  I had eaten out for every meal in NYC which was fantastic and special, but left me needing to just get back to basics.


My husband taught me this recipe and we call this dish Apple Cider Vinegar Tofu simply because a splash of apple cider vinegar is included.  Its simple and delcious.  This recipes serves 2; although the pups wished they could have had some!


1 - I make a cup of rice (organic short grain brown rice) in my rice maker or on the stove - whichever you prefer.  I cooked the rice in organic vegetable broth on Monday because I wanted extra flavor.  The tofu takes about 15-20 minutes so plan your rice cooking time around that.

2 - Start frying up that tofu.  Yes, I LOVE fried tofu.  I know it's not the healthiest way to eat it, but let me tell you its one of my favorite ways to.  I cut one large block of tofu into little size squares of choice.  At medium/high heat I add oil (1/4 cup) to the wok, let it heat a bit, and add in the tofu.  I keep an eye on the tofu as it fries because sometimes it sticks to the bottom of the wok. I like my tofu nice and crispy. 


3 - When tofu is done frying, dump it onto a plate covered with paper towel to get rid of excess oil, clean the wok, and add the tofu back into the wok on the stove at medium heat.

Fun part coming up...

4 - Add about 2 tbsp. of apple cider vinegar to the tofu and mix around by moving the handle of the wok.  Next add about 2 tbsp. of soy sauce and bounce the tofu around.  Let the tofu soak up the liquid for a minute or so.  Lastly, I sprinkle onion powder and garlic powder to taste on the tofu and again mix it up!

5 - While the tofu sits on the heat on low keeping warm, I sauteed kale in garlic to go along side.  Most of the time we steam broccoli with this meal, but kale was all we had and it paired wonderfully.

Now the really fun part...


Eat up!  This meal is comfort food in my heart and makes me feel right at home.  Give it a try =)

  2. Yumm I love apple cider vinegar. It is my favorite seasoning in my kitchen besides cumin.
