Peppermint Cookie Truffles with Candy Cane Sprinkles (vegan) and a Coffee Giveaway!

I believe the timing is perfect for these holiday truffles as today we got our first true snowfall.  The world around me is a bright white making everything look beautiful.  Time to welcome the holiday season with wonderful desserts!    
 
 
Enter Peppermint Cookie Truffles.  Of course these are vegan and scrumptious.  I had these a few years ago when I was still rather new to a plant-based diet at the time and I could not believe how fantastic they tasted.  It was time to recreate them!

Here’s what you’ll need:

1 package Newman-0's Hint O' Mint (I had 4 cookies leftover)
Tofutti Cream Cheese - 1/2 the container (4 ounces)
Candy Cane


 Directions (Makes about 16 Truffles):

1. Line a muffin tin.


2.  Smash the cookies and then combine the crushed cookies and Tofutti in your mixer (or hand mix) until it becomes a chocolate paste.




3. Melt the chocolate in a separate bowl.


4. Take a tablespoon of cookie mixture and drop it in the melted chocolate and then place each individual ball in a muffin tin.



5.  Sprinkle the balls with crushed candy cane.

6.  Put in the freezer for 30 minutes and then serve cold.


7. ENJOY!

Now I don’t recommend you eat these truffles all by yourself (although you'll want to) because they are quite rich.  So get your family and friends together, brew some coffee, and enjoy truffles!

Let me just say that I certainly have been starting my day with coffee!  And delectable coffee it is.

I had not tasted Lavazza Coffee previous to this, but I definitely will have it again.  A splash of almond milk added the perfect touch.  

And just because I feel like I have to say this:  I was not paid to provide this review and everything I shared with you is my honest heartfelt opinion.  I would never tell you guys something is delicious if it wasn't, and I certainly wouldn't recommend something to you if I didn't think you would enjoy it.

  2. I love the simple truffle! I didn't like peppermint stuff until I tried Ghiradelli's peppermint bark when I was in college. SO good.

  3. These look incredible!! And you know I love my peppermint :) My guess is that the giveaway isn't open to Canadians...most aren't! But maybe it's my lucky day!

  4. Those definitely look great! I might try them in our food processor, crumble a bit more evenly than the meat hammer :) But definitely want to give those a shot!

  6. I want to try the Lavazza Gran Aroma bar and my favorite holiday dessert is peppermint chocolate brownies :) Holiday desserts are the best!
