The Holiday Season and Great Vegan Recipe Books

Hi!

I feel like its been months since we last chatted.  I missed you!  My life has been very full of things that had to take precedence over blogging, but you know how that goes, so thank you for understanding.    I hope you are enjoying December!  I'm so very happy for a fresh new month.

The snow made a beautiful appearance on Thanksgiving.  My Mom made our pups those holiday scarves.  I know it's hard to see, but the scarves have dogs on them with Santa hats (the cuteness).  You can believe this picture will be a part of our holiday photo this year.

We still need to put up our Christmas tree, but we did put up a pretty wreath on our front door a few weeks ago.  Our neighbors put those icicle lights all over their house and I am very appreciative of their decorating skills.  This weekend we will make more progress with decorating.

I'm back into juicing.  I woke up one morning recently and just wanted a glass of fresh juice!  This juice concoction is:  3 celery stalks, 3 apples, 1/2 lemon, and handful of kale.  YUM!  This weekend I plan to buy more makings so I can juice more frequently.

I was having a little trouble juicing the kale without it clogging my juicer, but it worked.  I found that the kale we grow at home juices the best (and tastes the best).

Anyone else have this problem?  What's your trick?

Lastly, I wanted to share with you two books that I have been referring to a lot lately and will continue to especially as we get closer to Christmas:

These cookies are wonderful!  You will not need to tell anyone that they are vegan.  Just simple serve and let your guests enjoy.  You are then also giving the gift of a delicious and happy cookie.  Also, if you are new to vegan baking, this is a great way to jump in.

Of course this time of year can be very expensive, but your food bill definitely does not have to be.  This books has TONS of recipes and for CHEAP!  My current favorite:  that Mac & Cheese I shared with you last week.  On Monday, I paired it  with with a faux chicken pattie and a pile of kale.  And there were 4 portions of leftovers - WOOHOO.  This book also makes a fantastic gift not only for yourself, but for others.

Enjoy your Thursday!

What's your favorite holiday cookie?

  1. When we juice leafy things, Josh tries to go with something solid and easily juiced, then something leafy, and then something solid again. Usually apples help pull everything through. Your juice concoction sounds tasty. I love celery in my juice.

  3. I love that picture of your puppies.... I always buy my juices but it never seems like they have any problems juicing Kale. I prefer spinach anyways it doesnt have a bitter taste.

  4. We make a whole variety that I love for our holiday baking weekend - shortbread, gingerbread, dipped mocha slices, peppermint pinwheels, peppermint whoopie pies, buckeye balls, as well as homemade toffee ... just love them all!

Thanks for the book recommendations, will have to check them out!
