A New No Bake Cookie

Remember the last batch of no bake cookies I made?  If you're new to Love A Latte, check them out here.  They were fantastic.  I've fallen in love with the no bake cookie because it's just so simple and tastes great.  I was craving one after this tasty dinner last night - sesame tofu with kale - it's on the menu each week because it's so good.  I think it looks pretty on the plate too.

Ok, back to no bake cookies!  I was missing a few ingredients from that last recipe and I couldn't find a healthy looking recipe online so I decided to try creating my own.  When you want dessert, you make it happen.  Know what I'm talking about?  It's not that different from the last so it's not like I was that creative, but if you are a peanut butter lover (like me), you'll love these!
 
 
Ingredients:
 
1/3 cup maple syrup
1/3 cup brown rice syrup
1/3 cup safflower oil
3 tbsp. ground flaxseed
1 tbsp. cinnamon
1/2 cup peanut butter
1 + 1/4 cups quick oats
 
1. Over medium heat, add in a pot the syrups, oil, flaxseed and cinnamon for 3 minutes; stirring constantly (will be boiling) then after 3 minutes remove pot from heat.
 
2. Stir in the peanut butter and oats.
 
3. Form into little balls and place on wax paper in the freezer for 30 minutes.
 
4.  Time for peanut butter cookie delight!
 
 
Notes:  I really just added the ground flaxseed to had some nutritious goodness; I think I could have probably added another tbsp. or two of the flaxseed.  I still need to try these with whole oats rather than quick oats; however, I only had quick oats in the cupboard.  I store the cookies in a container in the freezer and then take one to work each day.  They are quite hard right out of the freezer so they need a few minutes to defrost. 
 
I'm already thinking about one of these cookies with a latte this morning ;)

  1. I love the addition of flax to these! I think it adds a great texture to everything, so I'll listen to your note and add a little more of it :)

    Yes, love PB! Last night I had some lemon garlic baked shrimp, sugar snap peas, and quinoa! nothing too crazy!
