Happy Things

Hey hey hey!

How are you?  The weather has drastically changed and it is so enjoyable.  It is only going to be 70 degrees today and it's fantastic.  The dogs love walking in this weather and I love running.  We opened our windows this morning for fresh air rather than air conditioning.  My husband mowed the front lawn and did some weeding (thank you!) - he's a teacher and the pups are loving having him home for the summer - and I drove off to work with a hot cup of coffee in a to-go mug.  Fantastic!

My happy things are...


1 - Walking the pups and especially in the evening when I get to join the walk with my husband.

2 - Coffee!  I haven't had a cup of hot coffee in what seems like a while.  I was getting Frappacinos and Refreshers from Starbucks in the heat, but on this cool morning, a cup of coffee from my Keurig was perfect.


3 - Bagel with Tofutti cream cheese as my mid-morning snack at work.  I love Tofutti!  I think it's way better than regular cream cheese.  It basically tastes like plain cream cheese, but better (and vegan).  Give it a try and you'll know what I mean.  It's amazing in a frosting recipe I have that goes on top of pumpkin chocolate chip muffins too!

4 - Getting a fun lunch out at work.  I try not to eat out much during the work week just because it can get crazy expensive, but I treat myself here and there.  On Tuesday I got a Mambo Salad from a Mexican restaurant down the street.  It was in crispy flour tortilla bowl with lettuce, black beans, avocado, oranges, and pico de gallo with a pineapple-cilantro vinaigrette.  I really want to make a homemade version soon because it was so tasty.

5 - Kale from our garden.  On our walk on Sunday, we stopped by our community garden and I picked a bunch of kale.  The garden was destroyed a bit with this crazy weather, but some things have survived.  The red romaine is looking pretty happy and the kale (pictured above) was delicious.  It made me happy to eat something we grew.  Oh yeah I've been eating juicy nectarines (store bought) all week and they are beyond delicious - ok so maybe I said 6 things, but you don't mind.

So those are some happy things from my week.

Also, my Dad is staying with us the remainder of the week.  He's our first houseguest!  Lincoln's going to have to give up sleeping on the futon for a few days...

  4. You grow Kale?!?! That's awesome! I am so thrilled the weather has cooled down. I shaved off a minute and half from the exact same run I did last week because I could actually breathe! Still not ready for summer to be over though...I tried a Barre class yesterday which was my fun activity of the week!

  5. Happy Things!

    1. Refried beans, jazzed up with some sauteed onion and a bit of corn. I could eat them straight from the pan, or served over a bit of rice, or in a burrito, or on chips... We made some for dinner this week, and I just enjoyed the leftovers for lunch!!

    2. $1 local coffee from the shop across the street. Rich, sweet, strong, and a great way to start my morning. It's probably turning my teeth yellow, but I don't even care.

    3. Whipped cream. I wish I didn't like it so much, but I do. I usually steer clear, but enjoyed a bit of ice cream earlier this week, and splurged for the whipped cream on top.

    4. Living close enough to family that we can have mid-week dinner together to celebrate a birthday. Yay!

    Whoops. I guess food is making me happy this week! =)

  6. Pineapple-cilantro vinaigrette YUMM!!!

    I am loving this weather too. I got cold on the way to work today, that made me so happy. Today I'm heading out after work for a 9 mile run so I needed cold weather.

    I'm definitely happy about this break in the weather too! So much nicer to run and walk the baby and dog in!
